Ventoux was for a long time a major animal farming region. Nowadays, sheep farms are concentrated around Sault. Farmers pass down traditions and practices from one generation to the next.
Lambs are often of the southern pre-Alps breed. They are first fed by their mother, whose milk tastes of wild plants, and then given a rich, balanced diet of grains grown on site: barley, oats and triticale. This is of course reflected in the quality of the meat, with its pleasant texture and incomparable subtle taste.
Lambskin is particularly soft and silky, and highly popular in the gloving industry.
